Dominican Fried Bakes

Ingredients

500g plain flour1.5kg
1 tbsp baking powder170g
1 tbsp fine sea salt750g
1/2 tbsp caster sugar1kg
480ml lukewarm whole milk1L
20g unsalted butter, melted250g
500ml vegetable oil, for deep frying1L

Method

  1. Combine dry ingredients and mix (flour, salt, and baking powder)
  2. Add lightly melted butter mix.
  3. Gradually add lukewarm milk.
  4. Gently knead the dough with hands.
  5. The dough should not be firm but with a sticky consistency.
  6. Separate into small portions in the shapes of balls based on the desired size.
  7. Let the balls rest for 15 – 20 minutes covered with a towel or saran wrap.
  8. Flatten dough using hands, using your thumb to press dough in
  9. Deep fry in a saucepan (I use a saucepan because the frying pan is too wide, and I'll need to use too much oil to deep fry). Use medium heat.
  10. Turn over on the other side when dough strarts getting brown, then turn over to brown the other side
  11. Enjoy with your favorite side
