Feta and Spinach Shakshuka

Gently poached eggs nestled in a spiced tomato sauce, finished with salty feta and spinach.

Feta and Spinach Shakshuka

Ingredients

4 large eggs6 pack
3 tbsp tomato passata500g
1 tbsp olive oil500ml
1 shallot, chopped300g
1 celery stick, diced1 head
1 garlic clove, crushed3 pack
50g fresh spinach200g
75g feta cheese, crumbled200g
1/2 red pepper, sliced1 piece
1 tsp ground cumin40g
1/2 tsp salt750g
1/2 tsp black pepper50g

Method

  1. In a pan heat the oil medium to high heat, with a tablespoon of olive oil
  2. Add the chopped vegetables as onions, garlic, celery and red pepper. Stir all together for 5 mins.
  3. Add the cumin powder and salt and pepper and the tomato sauce and let it cook for another 7 mins.
  4. Add the eggs, cover and leave to coo for 8 mins. Add the fresh spinach and feta cheese at the end.
  5. Serve with fresh bread.
