Ingredients

1 small red onion1 unit

1 bunch fresh coriander25g

125g cherry tomatoes250g

½ red pepper1 unit

3 tbsp extra virgin olive oil500ml

2 tbsp red wine vinegar350ml

1½ tsp smoked paprika45g

Pinch of sugar1kg

Method

Put all the ingredients in a food processor and pulse until chopped, but not too fine. Pour into a serving bowl and add seasoning and a pinch of sugar.
