Crisp bite-sized Canadian doughnut drops tossed warm in fragrant sweet cinnamon sugar.

Ingredients

250g plain flour1.5kg

70g granulated sugar1kg

3 tsp baking powder170g

½ tsp fine salt750g

1 large egg, beaten6 pack

180ml milk1L

500ml vegetable oil, for frying plus 3 tbsp for batter1L

2 tbsp icing sugar, for dusting500g

Method

Sift together dry ingredients.
Mix together wet ingredients and incorporate into dry. Stir until smooth.
Drop by teaspoonfuls(no bigger) into hot oil (365 degrees, no hotter), turning after a few moments until golden brown on all sides.
Remove and drain.
Roll in cinnamon sugar while still warm and serve.
